Animal Science Meat Sales Information


Meat is cut, wrapped and frozen when sold. See chart below for products offered.

Sale dates are scheduled at the discretion of the Meat Laboratory Manager (when product is available). Individuals on the online store will be informed of availability and upcoming sale dates. Please register online to become an active member of our online store. (If you experience difficulty registering for the online store, please email Karyn at kberchen@uwyo.edu for registration)

We appreciate timely pick-up of your order, any order not claimed on the day of the scheduled pick-up will be canceled.

Sales are held in the Meat Sales Room located on the West End of the Animal Science/Molecular Biology Building in room #136.

Order totals will be calculated at the time of order pick-up. Credit cards, Checks and Payroll Deductions (deductions available for UW employees only) are the only forms of payment accepted.

**NOTE** Please keep in mind that we are a teaching facility.  Cuts of meat may vary in size from commercially cut product and occasionally some pieces may be missing from described packages due to research/classroom projects.

**NOTE**Due to the varying size of each animal, the weight listed below is an average weight of a typical order. The package you pick up may be larger and will cost more due to the extra amount of product.

Approximately 20% fat.  Package contains 10 packs of four 6-oz hamburger patties.  (40 patties per box)

Rib Package, Semiboneless BEEF

Includes: Beef Rib Steaks (bone-in), Large End Rib Roast, Petite Tender (Steak), Mock Tender Roast, Top-Blade Steaks.

25-45 LBS

Rib Package, Boneless BEEF

Includes: Beef Rib-eye Steaks, Rib-eye Roast, Petite Tender (Steak), Mock Tender Roast, Top-Blade Steaks.

75-90 LBS

Bone-in Forequarter BEEF
Includes: Arm Roast and/or Steaks, Blade Roasts and/or Steaks, Flat-half Brisket Roast, Point-half Brisket Roast, Rib Steaks, Rib Roast.

Boneless Hindquarter BEEF
Includes: Top-loin steaks, Tenderloin Steaks, Tenderloin roast, Sirloin medallion steak, Sirloin Steaks, Breakfast Sirloin steaks, Top round steak, Cube Steak, eye of round roast.
60-80 LBS Semi-boneless Hindquarter BEEF
Includes: Top-loin Steaks, T-Bone Steaks, Porterhouse Steaks, Tenderloin Roast, Sirloin Medallion Steak, Sirloin Steaks, Breakfast Sirloin Steaks, Top Round Steak, Cube Steak, Eye of Round Roast.
45-60 LBS Side of Pork
Includes: Boston Butt Roast, Pork Chops, Country Style Ribs, Sirloin Roast, Spare Ribs, Smoked Ham Rump Portion, Smoked Ham Shank Portion, Smoked Ham Hock, Smoked Ham Steak, Smoked Bacon, Smoked Bacon Ends and Pieces, Fresh Breakfast Sausage.
30-45 LBS Lamb
Includes: Arm Chops, Blade Chops, Spare Ribs, Lamb Shanks, Rib Chops, Loin Chops, Sirloin Chops, American Style Leg of Lamb.
10 LBS Ground Lamb
Sold in 2 pound packages.
