Buffet Dinners


Signature Buffets & Served Meals

Service includes uniformed staff, delivery and pick-up, linen tablecloths, and napkins. All Signature Buffets include a mixed green salad with a selection of toppings and two dressings, rolls, butter, iced tea and water.

Any buffets served outside UW Conference Center and Marian H. Rochelle Gateway Center may be upgraded to china and glassware service for an additional $3.00 per person.

All Prices are per person and reflect different portion sizes for different meal periods. Lunch portions are available until 3:00 pm, after which dinner prices will be charged to all buffet services.

Entrée Choices:


Beef

● Slow roasted Beef with Au Jus - Lightly dried rubbed beef round

● Marinated, Grilled Flank Steak - Our most popular beef dish, thinly sliced for tenderness

● Black and Bleu Sirloin Steak - Grilled sirloin steak, topped with a melted bleu cheese

● Barbecued Brisket - Thinly sliced oven-roasted beef with a tangy barbecue sauce

● Braised Sirloin with Cherry Sauce


Chicken

● Chicken Piccata- Seared chicken breast served with a light lemon sauce with capers

● Martini Chicken - Seared chicken breast with a sundried tomato, garlic, basil and a mushroom red wine butter sauce

● Chicken Mole - the quintessential Mexican dish, with a delicious, complex sauce which includes chile and chocolate.

● Puerto Rican Chicken - Grilled chicken in the bold latin flavors of lime and oregano.

● Chicken Marsala - Seared chicken with sautéed mushrooms in a Marsala butter sauce, served with Parmesan polenta and creamed fresh spinach

● Hibachi Chicken- grilled with an Asian marinade, topped with teriyaki garlic butter


Seafood

Prices may change due to market price and availability

● Maple-Mustard-Mixed Pepper Glazed Salmon

● Shrimp Scampi with Pasta - Served with a white wine, garlic and basil sauce

● Potato Crusted Salmon - Baked Salmon filet with a crisp seasoned potato crust

● Grilled Halibut with White Wine Sauce


Pork

● Pork Vindaloo with Curry Sauce - tender and spice braised pork over potatoes

● Grilled Pork Tenderloin Medallions with Apple

● Breaded Pork Loin with Mushroom Sauce

● Caribbean Jerk Pork Loin - Pork Loin rubbed with a sweet and spicy Caribbean jerk seasoning, served with Mango Chutney

● Italian Sausage Lasagna - Traditional style lasagna with semolina pasta, seasoned ground beef, marinara sauce and a three cheese blend of ricotta, parmesan and mozzarella.


Vegetarian & Vegan

● Vegetarian Lasagna - Traditional style lasagna with semolina pasta, seasoned broccoli, carrots, cauliflower, onions, mushrooms, and squash blend, marinara sauce and a three cheese blend of ricotta, parmesan and mozzarella

● Cheese and Spinach Ravioli - Served in a tomato and basil sauce

● Pasta Primavera - Fresh vegetables in a rich tomato sauce with pasta

● Agave Sweet Potatoes and Spinach with Garbanzo Beans (Vegan)

● Grilled Vegetable Strudel - seasoned fresh vegetables, grilled and rolled in a flaky puff pastry, then baked to a golden brown.

● Vegetarian Moussaka - eggplant casserole with artichokes, tomatoes and potatoes.

● Stuffed Portobello Mushroom Caps - fresh Portobello filled with a mixture of seasonal vegetables, garlic and Parmesan cheese. Baked to perfection, and served with red pepper Coulis.

Starches

● Regular or Garlic Mashed Potatoes

● Rice Pilaf - White rice, tossed with onions, mushrooms and bell peppers

● Roasted and Glazed Sweet Potatoes - Baked with a honey-maple glaze

● Roasted New Potatoes - tossed and roasted with olive oil, garlic, rosemary and thyme

● Herbed Couscous - Middle Eastern pasta made from durum wheat

● Polenta with mushrooms, sun dried tomatoes, or green chile & cheddar

● Potatoes Au Gratin - baked with Asiago, Parmesan and Monterey cheese blend

● Red Beans and Rice - slow cooked until tender with savory herbs, diced carrot and celery


Vegetables

All fresh vegetable selections are subject market to availability

● Citrus or Pomegranate Glazed Carrots

● Garlic Broccoli, Cauliflower & Carrots

● Baked Tomato Parmesan

● Roasted Brussel Sprouts tossed in balsamic vinegar and shredded parmesan

● Squash Ragout (Tomato Zucchini, Yellow Squash, Thyme, Rosemary, and Oregano)

● Braised Greens

● Curried Cauliflower

● Roasted and Mashed Winter Squash with cinnamon and honey
