Lunch Menu


Minimum of 12 Guests

Excellent for a working lunch or a short break. Served in an eco-friendly biodegradable box with a choice of a bottled water or canned soda. *Vegan options available upon request. 

The Prexy Boxed Lunch

$11.75 each

Your choice of sandwich, whole fruit, a bag of chips, and two cookies. Sandwiches are served on your choice of whole grain wheat bread or a tortilla wrap, with lettuce and tomato on the side.

Udi’s Gluten-free bread is available upon request.

• Slow-roasted beef and mild cheddar cheese

• Smoked ham and Monterey Jack cheese

• Deli turkey and Swiss cheese

• Fresh, sliced vegetables and hummus

The Ivinson Boxed Lunch

$13.50 each

For a more upscale lunch-on-the-go, try our Ivinson’s Boxed Lunch. Inspired combinations with artisan breads, lettuce and tomato, diced seasonal fruit, and choice of fresh baked individual fruit pies or slice of cake.

● Slow-Roasted beef with bleu cheese and caramelized onions on a flaky croissant

● Grilled chicken with avocado, bacon, and chipotle aioli on rustic ciabatta bread

● Hummus, artichokes, feta cheese, black olives, sun dried tomatoes, and basil pesto on a croissant (vegetarian)

● Curried chicken salad on croissant

● Ham, salami, turkey, provolone, and a cream cheese pesto sauce on rustic ciabatta bread

● Traditional turkey club sandwich on 100% whole grain wheat bread

● Tuna Salad with white grapes in a pita pocket 

● Muffaletta- the great New Orleans version of the submarine sandwich. Loads of ham and cheese on special muffaletta bread, topped of with a unique olive relish.

Cold Luncheon Buffets

Minimum of 24 Guests

Served with eco-friendly compostable plates, utensils, and napkins. Includes bottled waters or canned sodas. Assorted dessert bars or cookies. Add Soup du Jour to your menu for an additional $2.00 per guest.

The Devil's Tower Wraps Buffet

$13.75 per person

Choose from the following selection of wraps with seasonal diced fruit salad, choice of potato or pasta salad.

• Chicken Caesar- strips of seasoned chicken breast

with romaine lettuce, parmesan cheese, and Caesar dressing

 Cajun Chicken- spicy strips of chicken breast,

romaine lettuce, tomato, and chipotle aioli

 Italian- Ham, salami, turkey, provolone, and a cream cheese pesto sauce

 Club - Sliced turkey breast, bacon, lettuce, tomato, and Swiss cheese

 Beef - Slow-roasted beef, cheddar cheese, lettuce and tomato

 Vegetarian - Romaine lettuce, cucumbers, artichoke hearts, black olives, red onion, sun-dried tomatoes, balsamic vinegar and a pesto cream cheese spread

 Thai Wrap- Diced chicken, carrot, onion, cucumber, lettuce, and cilantro with a sweet chile-peanut dressing

The 7220 Deli Buffet

$16.00 per person

Create your own deli sandwich from assorted breads, meats and cheese. Also served with a choice of salad, chips and sandwich condiments.

● Tabbouleh - Bulgur grain, fresh parsley, fresh mint, scallions, tomatoes, lemon juice, and olive oil

● Pasta Salad du Jour - Chef’s choice, made fresh

● Potato - Chef’s choice, made fresh

● Mixed greens - arugula, red leaf, radicchio, romaine, and baby spinach with cucumbers, carrots, tomatoes, and two dressings

The Lodgepole Creek Salad Buffet

$15.50 per person

Additional Salads $3.00 per additional person

Served with dinner rolls, butter, and a choice of 3 salads.

● Mixed greens - arugula, red leaf, radicchio, romaine, and baby spinach with cucumbers, carrots, tomatoes and two dressings

● Chicken Curry - Diced chicken with a light curried dressing

● Chicken Pecan - diced chicken with pecans, apples, celery, and a creamy lemon dressing

● Thai Cucumber - Cucumbers, Thai spices, red onion, and peanuts

● Pasta Nicoise Salad - Cavatappi pasta with Albacore tuna, red peppers, crunchy green beans, capers, and fresh parsley, and a lemon-dijon dressing

● Machu Picchu Salad- Black beans, hominy, and quinoa with salsa verde

The Cottonwood Creek Salad Bar

$16.00 per person

A robust salad buffet including protein and dressing options, served with fresh rolls and butter.

Snowy Range Cobb Salad

$17.00 per person

Crisp romaine lettuce, diced tomato, smoked bacon, chicken breast, chopped egg, and avocado accompanied by ranch or herb vinegrette. 

Rawhide Buttes Chef Salad

$17.00 per person

This traditional favorite is served with lettuce, julienne cheddar and pepper-jack cheeses, julienne turkey and ham, hard boiled egg, black olives, cherry tomatoes, sliced radishes, and sliced cucumbers, accompanied by ranch or herb vinegrette. 

Sand Mesa Fajita Salad with Chicken

$17.00 per person

Southwest seasoned, grilled chicken breast served on romaine lettuce with roasted corn kernels, black beans, sliced black olives and cheddar cheese accompanied by a chipotle ranch dressing.

Acropolis Chicken Salad

$18.00 per person

A bed of mixed greens surrounded by cherry tomatoes, kalamata olives, capers, scallions, banana peppers, and feta cheese. Topped with grilled chicken breast and lemon rosemary vinaigrette.

Korean BBQ Salad

$18.00 per person

Romaine lettuce, sweet BBQ steak, julienned carrots, peppers, & red onions with a sesame-ginger vinaigrette

Mandarin Chicken Salad

$18.00 per person

A bed of fresh spring greens topped with shredded chicken, toasted almonds, mandarin orange wedges, crispy wonton noodles, and a sesame-ginger dressing.

Asian Cobb Salad

$18.00 per person

Your choice of spicy chicken or beef strips with shredded carrots, julienned scallions, bamboo shoots, baby corn, and snow peas on a bed of spring greens with sesame ginger and sweet chili dressings.

Thai Cucumber Salad with Baked Salmon

A cool refreshing salad on a bed of cucumbers marinated in Thai spices with red onion and peanuts topped with a filet of baked salmon.


Prospect Mountain Steak Salad

$18.50 per person

Marinated grilled flank steak over romaine with cherry tomatoes, provolone cheese, shaved carrots, red onion, cucumbers, and fried onion strands with a chipotle-lime ranch dressing.

Grecian Cobb Salad

$19.00 per person

A lean chicken breast, marinated in Greek seasonings and grilled on a nest of mixed greens with avocado, roasted corn, tomatoes, almonds, dates, fried onion strands, goat cheese, and an herb vinaigrette

Bourbon Street Shrimp Louis

$19.00 per person

Tender, sweet shrimp, avocado, tomatoes, sliced egg, green onions, and other seasonally available fresh veggies on a bed of baby spring greens, topped off with a slightly spicy remoulade sauce.

Service includes uniformed staff delivery, set-up and cleanup. Served with eco-friendly compostable plates, utensils and napkins. Comes with a choice of two of the following beverage options, water, iced tea or lemonade.

The Bacchus Feast

A feast fit for the Roman god! Fresh, tossed garden salad with assorted toppings and two dressings, your choice of two pasta types, two sauces, an Italian vegetable medley, garlic bread, and your choice of cookies or dessert bars.

Island Breezes

$17.50 per person

Seasonal fruit salad, grilled and marinated Puerto Rican chicken, coconut rice, black beans, and pina colada cake.

The Cajun Fais Do-Do

$17.50 per person

Garden fresh salad with two dressings, chicken & andouille sausage jambalaya, fried okra, red beans and rice, and Nilla Vanilla Wafer banana pudding.

Half Acre Barbecue

$19.95 per person

Dry rubbed, slow braised pork shoulder, pulled and served with a tangy BBQ sauce on a bun with coleslaw, baked beans, potato chips, and choice of cobbler.

Street Taco Bar

$21.00 per person

Everything you need for your own street tacos, including corn & flour tortillas; choice of two- marinated chicken, beef, or sweet potato & black bean filling (vegan); sautéed onions and bell peppers, rice, pinto beans, a mixed greens with two dressings, and our churros made in-house with chocolate and caramel sauce.
