Introduction:
Jaden Tatum is an Assistant Professor and Extension Specialist focused on Human Nutrition & Food. She has a background in using food science and engineering to promote food safety, food security, and sustainable local food systems. In her research program, she prioritizes applied research and stakeholder engagement and has worked on projects ranging from improved drying and storage infrastructure for subsistence maize growers in East Africa to geothermally-aided high tunnel heating and cooling for farmers market growers. In her extension program, she hopes to bring education, and practical solutions to home cooks, consumers, producers, and the food and beverage industry across the state.
