UW Class Embarks on Culinary and Cultural Journey

The University of Wyoming’s Fall Bridge class, “Language and Food,” is set for a unique and enriching experience during International Education Week Nov. 13-17.

Award-winning chef Matthew Branson, executive chef for UW Campus Dining, will lead a demonstration and engage in a discussion with first-year students today (Monday). The students then will showcase their culinary skills by serving their own rendition of Branson’s recipe during a musical event -- “Music of Bali: Demo and Dinner with the Wyoming Gamelan” -- Wednesday, Nov. 15, from 6-8 p.m. in Room 1010 of UW’s Buchanan Center for the Performing Arts.

The event, which is free and open to the public, will mark the culmination of a service-learning project.

Branson’s discussion and cooking demonstration today will not only highlight his successes, but also delve into the invaluable lessons learned from setbacks, emphasizing the importance of perseverance. Through the sharing of his experiences, Branson aims to inspire and guide the students, providing them with valuable insights into the culinary world.

Today’s class session also will explore Branson’s philosophy on the fusion of flavors, textures and cultural influences in creating vegan dishes. Aligned with their current reading of “We Are the Weather: Saving the Planet Begins at Breakfast” by Jonathan Safran Foer, students will gain insights into Branson’s approach to plant-based cooking.

“The hope is that they learn to appreciate the creativity and skill involved in cooking meals without relying on animal products,” instructor Mollie Hand says.

In addition to the culinary and career exploration, students will have the unique opportunity to turn their newfound skills into service with a purpose. Following Branson’s presentation, students will prepare vegan jackfruit curry during class Wednesday, then showcase it during Wednesday evening’s public event.

The evening event is not only about savoring a delightful combination of flavors and rhythms, but also about giving back, Hand says. Students will actively participate in serving the jackfruit curry they prepared under the guidance of Branson. The event serves as a service-learning opportunity, allowing students to collect donations for the Karma Fund, a medical relief fund for international students at UW.

“The fusion of culinary artistry, cultural celebration and compassionate service is at the heart of the ‘Language and Food’ class,” Hand explains. “Chef Matthew Branson’s flavors meet the enchanting melodies of Bali, creating an unforgettable experience for the senses.”

While there is no admission fee, cash donations of any amount are welcome at the door.
