Food Days at UW to Underscore Sustainability Efforts

To raise awareness about healthy eating, sustainability and local foods, the University of Wyoming's Washakie Dining Center will host “Food Days” Oct. 24-26.

"This year, Food Day and Campus Sustainability Day fall within two days of each other and Dining Services is rolling it into a three-day event of food for thought," says Residence Life and Dining Services Dietitian Amy Bey. "Through this event, we hope to make diners aware of what they can do on a personal level to eat healthier and more sustainably as well as expose them to some delicious local foods."

Food Day is a national campaign spearheaded by the Center for Science in the Public Interest to promote healthy, affordable foods produced in a sustainable, humane way.

Campus Sustainability Day efforts seek to increase awareness about what campuses and individuals can do to be more sustainable. UW signed the Presidents Climate Commitment in 2007. Information about what UW is doing to become more economically and environmentally stable is available at

"This event has given Dining Services an opportunity to branch out into more local suppliers," Bey says. "It's not as easy as stopping at the farmers' market on the way home when you are serving more than 1,200 people. We had to find suppliers that could handle the quantities of food we need, deliver to our facility and meet our food safety standards."

  • Monday, Oct. 24: Food Days begins with a food drive and information on the Food Day principles in Washakie Dining Center.
  • Tuesday, Oct. 25: The Local Foods Harvest Dinner will be from 4-7 p.m. at Washakie Dining Center. The dinner is open to the public and features roasted prosciutto wrapped leg of lamb, fettuccini with roasted heirloom squash and sage, UW beef hamburgers, Cajun seitan with braised greens, bacon, pear and bleu cheese pizza and more.
  • Wednesday, Oct. 26: Washakie Dining Center will support Campus Sustainability Day by going trayless to promote food waste reduction. A local foods cooking demonstration by Chef Carl Moe of UW catering will occur from 4:30-6:30 p.m.
